Spicy BBQ Meatloaf

Ingredients

Meatloaf

  • 2 lbs. Marcho Farms Meatloaf Mix (Veal, Pork, Beef)
  • 8 oz. Toasted Corn Bread Crumbs, processed
  • 2 eggs, beaten well
  • ¼ cup milk
  • 1 small onion
  • 1 bell pepper
  • 2 garlic cloves
  • 1/2 cup grated smoked cheddar cheese
  • 2 Tbsp. fresh chopped parsley 
  • 1 Tbsp. BBQ Spice rub
  • 2 Tsp Pepper
  • 1 Tsp Ground Sage

BBQ Glaze

  • 1 cup ketchup
  • ¼ cup brown sugar
  • 2 Tbsp. Brown Mustard
  • I Tbsp. BBQ Spice Rub

Directions

  1. Preheat oven to 325 F
  2. Roughly chop onion, garlic, and bell pepper. Combine in a food processor and process until fine. 
  3. Place meatloaf meat mix, bread crumbs, processed veggies, eggs, milk, cheese, parsley, BBQ spice rub, pepper and sage in a large bowl and mix to combine. 
  4. Shape the meatloaf into a log by laying out a large sheet of plastic wrap, placing the meat mixture in the center of the plastic wrap, wrapping up the meat mixture and rolling back and forth. 
  5. Place the shaped mixture on a baking sheet, remove all plastic wrap and bake at 325 F for 15 minutes. 
  6. Make the glaze by combining the ketchup, brown sugar, brown mustard, and BBQ spice rub in a small bowl. 
  7. Remove the meatloaf from the oven and cover with half of the glaze. 
  8. Replace meatloaf in the oven and bake for 10 more minutes, then remove and cover with the other half of the glaze. 
  9. Continue baking to an internal temperature of 165 F. Allow meatloaf to rest before cutting and serving.
